

This fridge-set brownie recipe layers melted chocolate, gooey marshmallow, fresh raspberries, and Bad Brownie bites into one outrageously indulgent treat. It’s perfect for BBQs, dinner parties, or emergency pick-me-ups. All you need is a tin, a few ingredients, and zero self-control.

🧾 Ingredients
- 200g of your favourite chocolate (dark recommended, but milk or white works too)
- 1 punnet of fresh raspberries (approx. 150g)
- 1 bag of marshmallows (standard size)
- 1 box of Bad Brownie Summer Berry 12-Bite Box
(Includes Red Velvet Blondie, Raspberry & White Chocolate, and Strawberry Blonde brownies) or any brownies you fancy - Optional extras: chopped chocolate bars, nuts, sweets (we used the M&S Big Daddy Pistachio Bar)
- Extra decorations of your choice
- Baking paper + loaf tin or cake tin
Prepare the tin
Line a loaf or cake tin with baking paper. This will help you lift the dessert out later in one glorious slab.
Melt your chocolate base
Gently melt 200g of chocolate (use a microwave or bain-marie). Pour into the bottom of the tin and spread evenly.
Add the raspberries
Arrange a tight layer of fresh raspberries over the melted chocolate. Pack them in close, like a well-drilled berry regiment.
Make the marshmallow layer
Melt a bag of marshmallows over low heat (or microwave in 30-second bursts). You can either pipe the gooey mix on or pour it straight over the raspberries.
Chop and layer your brownies
Roughly chop your brownies (we recommend the Summer Berry box for max flavour variety) and squish the pieces gently into the marshmallow layer.
Add extra treats
Sprinkle in chopped chocolate bars, nuts, or whatever crunchy/sweet add-ins you love.
Top with more chocolate
Melt more chocolate and pour over the top to seal the deal.
Chill
Wrap in cling film or with a lid. Place the tin in the fridge for at least 2–3 hours, until set.
Slice & serve
Slice into bars, squares, or full slabs. Serve with fresh berries and ice cream for dessert, or sneak bites straight from the fridge. We won’t tell.
